Food Quickie: Creamy Avocado Pasta Sauce
*Oh dear magic bullet, I cannot stress enough how much you come through when I need to whip up something quick and delicious!*
Yes, sometimes I'm only willing to boil some pasta or rice noodles when hungry and in a hurry. That doesn't mean I want to compromise on the flavour though. Your little magic bullet/nutri bullet or a blender can be a great helper in situations like these. This sauce is extremely simple on the ingredients, is filling and even raw! So you don't waste any nutrients:) It can be paired with regular pasta, rice noodles, raw zucchini noodles, gnocchi and even instead of mayo for sandwiches!
This one is therefore a perfect candidate for the weekly food quickie recipe:)
What you need:
- 1 avocado (ripe & pitted)
- lemon juice from 1/2 a lemon
- 2-3 garlic cloves
- salt & pepper to taste
- 1 Tbs olive oil
Optional: - 1/4 cup fresh basil
- 2 Tbs ground pine nuts
- *if not using basil, substituting olive oil with some sesame oil gives it a whole new dimension;)
What to do:
- Put all the ingredients in a blender and blend until creamy. Use as a pasta sauce, veggie dip, or a spread. Enjoy!
